1. In a large bowl, whisk 450 grams of butter with 82% fat, using a mixer, together with 1 pinch of salt and 200 grams of vanilla powdered sugar.

2. In a separate bowl, mix 400 grams of flour, 110 grams of cocoa and 100 grams of starch. Pour the dry ingredients over the butter cream and powdered sugar prepared in step 1 and start kneading quickly, I recommend you use the gloves for this operation.

3. We do not want to activate gluten in flour. The biscuits would get a bread-like texture (slightly elastic), so we won't knead too much. We just knead so much that all the ingredients will need to be homogenized. Form a ball of dough and wrap it in cling film, pressing lightly and giving it a disc or rectangle shape. Refrigerate the dough for at least 1/2 hour.
