Matcha Financiers Recipe

Ingredients

  • 50 grams ground almonds
  • 150 grams caster sugar
  • 4 egg whites
  • 50 grams all-purpose flour
  • 2 ½ teaspoons Matcha tea powder
  • 140 grams butter

Directions

Combine the ground almonds, caster sugar, and 1/3 of the egg whites in a bowl. Whisk the ingredients to create an even batter. Whisk in the remaining egg whites in 2 additions (it will start off looking thick and compact, but will gradually get diluted by the egg whites).

Sift the all-purpose flour and tea into a bowl. Overturn the mixture into the almond batter taking

care not to create any lumps. Whisk the ingredients until they are evenly combined.

Warm the butter in a pan over a low fire until it turns nut brown (it should smell like hazelnuts).

Pass the melted butter through a sieve and incorporate it into the previous preparation. Cover the batter and let it rest for 24 hours in the fridge.

The next day, preheat the oven to 330 degrees Fahrenheit (165 degrees Celsius). Transfer the batter into a piping bag. Fill 2/3 of each financier mold with batter. Bake for 15 minutes and remove them from the oven. If you are using iron molds, remove the financiers from the pans immediately. If you are using silicone molds, let them cool before you unmold them. Financiers can be served lightly warmed or cold.

How does this affect the taste?

The L-theanine gives Matcha its sweet notes - our Japanese tea master calls it “sweet without sugar”.

When Matcha is bitter you know straight away that it’s low in L-theanine (therefore the benefits you get will be poor too). This is one of the first signs that it’s of a low quality and not the type you're after!

Sadly Matcha has become such a buzzword today, which has resulted in many low quality Matcha products in shops and online being sold as “ceremonial grade” - especially because there are no regulations that companies have to comply with in order to call it this way in Western countries.

Before launching Organic Burst Matcha we have been researching Matcha for many months, travelling across Japan and tasting a large variety of the best Matcha in Japan, the US and Europe.

Organic Burst Matcha is the real premium ceremonial grade, which is defined by:

  • Shading the tea leaves for at least 21 days - a difficult and expensive process that differentiates real Matcha from simple green tea. This is done to bring out its nutrient content, color and taste.
  • Picked only during the 1st harvest of the year - when the leaves are their richest in L-theanine. The later harvests produce lower grades of Matcha.
  • Lab tested showing very high levels of L-theanine.
  • Exceptional taste - creamy without cream, almost sweet, without sugar

Matcha Financiers

Spring break is finally here, which means I get to spend every day in my pajamas and get some spring cleaning done (I’m a fun person, I promise). I started my week off with a BBQ at my parents’ and I was in charge of dessert as per usual so I made two kinds of financiers: lemon blueberry and matcha. My dad isn’t a fan of green tea desserts, but I saw that the cherry blossoms in our neighborhood are starting to bloom and it made me crave green tea. I had to.

The batter comes together in less than 10 minutes. Brown the unsalted butter, and while that’s cooling, combine the dry ingredients in a bowl. Stir in the honey and egg whites, then add the cooled butter and mix until combined. Done.

Divide the batter evenly in a buttered mini muffin pan. I topped mine with pickled cherry blossoms (check out this post on how to prep the cherry blossoms). Bake in a preheated oven for about 10 minutes at 395°F (200°C). Let them cool in the pan for a couple of minutes and then take them out on a wire rack until completely cooled.

1. Cut the butter into pieces and melt it in a saucepan. Continue cooking until it turns a light brown color. Strain over a ramekin and let stand.

2. Mix the rest of the ingredients one by one: the icing sugar with the almond powder, then the matcha, the flour, finish with the egg whites until you obtain a homogeneous consistency.

3. Incorporate the brown butter in two batches into the preparation.

4. Pour the dough into mini financial molds. Slide into a preheated oven at 175 ° C for 12 to 14 minutes. Let cool out of the oven then unmold.

5. Arrange the financiers on a plate. Serve with fresh raspberries and green tea.

Matcha ice cream, matcha doughnuts, matcha bread. but my favorite way to enjoy the green tea has always been in the refreshingly delicious iced latte form. Unlike normal green tea, matcha contains the whole leaf that makes it much stronger in health benefits and caffeine. With a slight "grassy" taste, many describe it as sweeter than normal green tea. According to an article by Healthline, consuming antioxidants can help stabilize free radicals from your body. This drink is traditionally served warm, but can also be served iced according to preference. The iced matcha latte recipe below is the perfect way to brighten up any morning!

Matcha powder comes in a variety of qualities including culinary grade, ceremonial grade, and Grade A. Prices vary between grades, but the taste is fairly similar across the board and ultimately depends on personal preference. Another tool that is a good investment would be either an electric milk frother or an bamboo matcha whisk to ensure a fully blended drink every time. If you do not have either, a normal kitchen whisk can get the job done!

Matcha Green Tea Macaron with Chocolate Ganache Recipe

Macarons are French cookies that are just as delicious as they are beautiful. Many people believe that macarons are difficult to make from scratch, when in fact they are very easy. All you need is a gram scale and a great recipe (and we’ve got the recipe part covered.) These matcha green tea macarons with a chocolate ganache, is a spectacular Asian inspired variation. The variety of flavors results in the perfect cookie.

This recipe takes a little more effort than other matcha cookies, but the result is well worth the work. They are a lovely color and the refreshing vegetal taste makes the cookie taste just as good as it looks.

I love your story about being out-hipstered. Hilarious! I was not encouraged either. the tea smelled like rabbit or hamster food, but I agree did wind up tasting pretty good.

Oh these look so good! I love Financiers! I will have to make them next week when I am home. I have matcha and the Financier pans sitting in my kitchen, but they are not doing me any good here on Long Island.

Kind of off-topic, but Starbucks makes a green tea latte that I am rather fond of. (am I allowed to admit that?) Maybe that is because I know that no one else will drink it on me.

Both of your cakes turned out beautifully. Love the beautiful green color. How fun to be hip. (You were both braver than I was, I substituted vanilla for the Matcha.)

Both the madeleine and mini cupcake shapes turned out beautifully - so moist and such a vibrant shade of green.

Recipe Summary

  • 1/2 cup plus 2 tablespoons almond flour ( lepicerie.com)
  • 8 ounces (2 sticks) unsalted butter
  • 1/2 cup plus 2 tablespoons cake flour (not self-rising)
  • 3 cups confectioners' sugar
  • 8 large egg whites, room temperature
  • Vegetable oil or cooking spray, for pan
  • Orange Glaze, optional

Preheat oven to 350 degrees. Spread almond flour evenly on a rimmed baking sheet. Toast until browned, 8 to 10 minutes. Remove from oven, and raise heat to 375 degrees. Meanwhile, melt butter in a small saucepan over medium heat until browned, about 8 minutes. Immediately transfer to a bowl with browned bits. Let cool.

Combine flours and sugar in the bowl of a mixer. Add whites, and beat on medium speed until combined and sugar is incorporated. With machine running, pour in browned butter (with brown bits) in a slow, steady stream. Continue to beat for 3 minutes. Batter can be refrigerated for up to 3 days.

Coat a cast-iron pan with oil or cooking spray, and fill halfway with batter. Bake until dark gold (time will vary depending on size of pan). Remove from oven, and immediately transfer financiers from pan to a wire rack. Let cool. Coat each with glaze if desired, or serve immediately.
