Appetizer pancakes with cheese and zucchini
Break eggs in a bowl and beat until frothy, then add in turn, oil, yogurt, grated zucchini, but not drained and mixed cheeses.
Gradually add sifted flour with baking powder, aiming to get a slightly cursive composition, but thicker than the classic pancakes.
Add the spices and greens, mix everything and leave to rest for 15-20 minutes.
Grease the pan with a little oil, heat it and pour a polish from the composition, tilting the pan to arrange the composition evenly.
Brown the pancakes on one side and on the other over medium heat, turning them with a spatula.
Serve with various salads or cream cheeses.

110 gr flour
A big shaved apple
200 ml of milk
A spoon of sugar
A teaspoonful of baking powder
2 tablespoons oil (for frying)
If you have not made pancakes before: mix the ingredients until the dough becomes the consistency of a cream. (Put the flour with the blender so that it doesn't stick). Heat a non-stick pan and spread a very thin layer of oil (or oil and melted butter) preferably with a brush. Take with the polish a quantity of dough (about half a polish) and pour it into the pan, taking care to spread a thin layer on the entire surface of the pan. Leave for about 1-2 minutes on one side and return with a spatula. Remove to serving plates and dust with sugar and cinnamon. You can also add jam, melted chocolate or syrup (what you like & # 8230) I put a little maple syrup.
One of the eggs is boiled for mayonnaise, it must be boiled hard. The celery and carrots are cleaned well and washed and then put on a small grater. The apple is peeled and also grated.
From a raw yolk and boiled yolk + a tablespoon of mustard and a pinch of salt we start to prepare mayonnaise.
Pass the hard yolk with a wooden spoon and mix until it is homogeneous with the raw one until they become like a cream. Then add oil in the wire, mixing in the same direction, from time to time you add a little lemon juice and taste the mayonnaise, it must be slightly sour, not like beef salad.
Add mayonnaise over the vegetables and mix gently, do not add all the mayonnaise at once but in stages.
After the salad is ready we start to form stuffed ham rolls as shown in the picture. It is fixed with toothpicks and it is ready.

These pancakes with cheese and sour cream are wonderful! I haven't done them in a long time and I really missed them. They were my father's favorites, so I remembered with nostalgia the days when my mother prepared them.
The classic pancakes are made, I described here in detail how they are made, and they are filled with sweet cottage cheese. They are greased with sour cream and baked. They are delicious and tasty.
Pancakes: 500gr flour, 500ml milk, 3 eggs, 300 ml mineral water, 3 tablespoons oil, a pinch of salt.
Filling: 500 gr cottage cheese or urda, 250 gr caster sugar, lemon peel, vanilla sugar

The flour is mixed with eggs and salt. The liquids are incorporated little by little, to control the consistency of the dough. It must be a dough as thin as sour cream, without lumps.
Heat a non-stick pan and pour in the dough polish. Rotate the pan so that the dough spreads evenly over its entire surface. When the edges of the pancake turn golden, turn to the other side. Bake a little more, then remove from the pan. .Continue like this until all the dough is finished.
Mix the cheese with the sugar, add the lemon peel and vanilla. Fill each pancake with this cream.
In a yena bowl put a row of pancakes, cover with sour cream and continue until all the pancakes are finished. Put a generous layer of sour cream on top and put in the oven. Keep until they are nicely browned on top.
Remove, allow to cool and serve.
They are delicious both hot and cold.

ENDIVE SALAD WITH NOBLE CHEESE AND WALNUTS
Endive salad with cheese with mold and nuts is the appetizer of a special refinement that I recommend to everyone when they want something special for the guests and not only.
- 1 andiva
- 1 tangerine
- 1 para
- 50 gr. NUTS
- 40 gr. moldy cheese
- 1 tablespoon lemon juice
This delicate appetizer must be prepared a few minutes before serving, especially since it is very easy and you only need a few ingredients.
I peel the tangerine with a very sharp knife and separate each slice of white skin from the inside.
Clean it looks very well baked and juicy peel, then remove the back and the wood from the tail, slice it and sprinkle it immediately with lemon juice that will prevent oxidation.
I remove the spine from the endive which is quite bitter and carefully separate the fine sheets that I arrange in a circle on the prepared plate.
I alternately place a slice of pear and tangerine in them, sprinkle the small pieces of cheese with mold and then add the prepared walnuts from place to place.
To complete my quick snack today, I sprinkle the endives filled with a drop of lemon and tangerine juice that successfully completes the freshness of the fruit inside.
Pancakes with cottage cheese and meringue
I was inspired by a recipe from Mihaela's blog (which is a constant source for me and for which I have all the admiration) and I made something tasty and healthy for the children.
N e c e s a r e:
2 tablespoons sugar
1 sachet of vanilla sugar
for the filling:
250g cow's cheese
2 tablespoons sugar
1 sachet of vanilla sugar
2 tablespoons gray
6-8 egg whites
6-8 tablespoons sugar.
P r e p a r a r e:
First I put the raisins soaked in milk.
Then I prepared the pancakes. I mixed the eggs well with the sugar.
I then added milk and flour, alternately, until I obtained a semi-fluid composition. I did not give quantities of milk and flour because the whole amount depends on the size of the pan. 8 pancakes should come out. My pan is smaller, it is 23cm in diameter, so I adapted.
I baked the pancakes, which should come out a little thicker, and set them aside until I had prepared the filling.
For the filling, I mixed the cottage cheese with the sugar, the egg, the semolina and the raisins soaked beforehand, with the milk.
I greased a heat-resistant dish with butter. I took a pancake and spread the cheese over its entire surface, folded it into four and placed one in the bowl until I formed a circle.
With the second row of pancakes I did the same, only I turned the first one to 45 degrees, to create stability when I cut the slices.
For the meringue I beat the egg whites with the sugar. I had 8 egg whites and I put 8 tablespoons of sugar, but if you want it thinner put less egg whites and sugar proportionally.
I put the pot in the preheated oven, over low heat, until it became a golden meringue.
Be very careful not to think the meringue on top because it will be difficult to cut without cracking it. It took me about 30-40 minutes. I let it cool in the oven for about 2 hours and then I devoured it.
