Dessert overturned apple cake
We wash the apples, optionally peel them, put them through a large grater, put them in a pan, then add the sugar and butter.
Put on low heat until all the apple juice is reduced, stirring occasionally; at the end, add cinnamon to taste.
Let it cool very well.
While the apples cool, prepare the top.
Mix the egg whites with a pinch of salt until they double in volume, add the sugar and mix until it becomes a meringue.
Add the yolks rubbed with oil, essence; mix at low speed until incorporated. Sift the flour together with the baking powder over the egg composition. Mix with a spatula with movements from bottom to top, until smooth.
In a tray (20 x30 cm) lined with baking paper, add the crushed cookies, candied fruit, mix them, add the hardened apples on top, level and cover with the top composition.
Put in the preheated oven until it passes the toothpick test.
When the cake is ready, turn it over on a plate, remove the baking sheet and let it cool.
