This is a fun party dish! Simply arrange fresh spring vegetables in an herb flavoured hummus to resemble a spring garden in full bloom! Kids will enjoy plucking the veggies from the garden.

  • 2 (400g) tins chickpeas, drained and rinsed
  • 120g tahini
  • 120ml water
  • 1 lemon, zested and juiced
  • 10g freshly chopped basil
  • 15g freshly chopped parsley
  • 10g freshly chopped fresh chives
  • 10g freshly chopped mint
  • 1 clove garlic, peeled
  • 1/2 teaspoon salt
  • 6 small carrots with green tops still attached, or as desired
  • 6 sugar snap peas, or as desired
  • 6 fresh asparagus stalks, or as desired
  • 6 radishes with green tops, halved, or as desired
  • 6 small celery stalks with leaves, or as desired

  1. Blend chickpeas, tahini, water, lemon zest, lemon juice, basil, parsley, chives, mint, garlic and salt in a blender until smooth. Spread hummus in the bottom of a deep dish.
  2. Arrange carrots, sugar snap peas, asparagus, radishes and celery in neat rows in the hummus to resemble a garden.

I have made roasted red pepper hummus numerous times and thought I would change it up with this recipe. Definitely don't skip the tahini. Overall, the recipe is very fresh but a bit too lemony for my family. I would reduce the zest and juice by half or use a very small lemon.-28 Mar 2016

I brought this to a kids birthday party and it was a huge hit!! Fresh herbs are a must in this dish. I was glad our garden had all of the herbs listed. I have a severe allergy to sesame so I substituted EVOO for the tahini. Tahini is a rich flavor so I used an pretty expensive olive oil to compensate for the missing sesame. Turned out delicious! The vegetables garden looked great too! Will be making this again soon.-20 May 2018
