Egg salad with avocado

Until recently, I was reluctant to eat avocados, but since I tasted it, I started to like it a lot, and I think this salad will become a favorite! : X

  • 2 bucks avocado
  • lemon juice
  • 2 hard boiled eggs
  • 1 small onion
  • 2-3 lg Greek yogurt
  • salt
  • pepper to taste
  • a little olive oil

Servings: 4

Preparation time: less than 30 minutes

RECIPE PREPARATION Egg salad with avocado:

Boil hard-boiled eggs and allow to cool. Peel a squash, grate it and cut it into small pieces. Finely chop the onion.

Avocado is washed, cut in half, and with a spoon, remove the core. Put it on a plate, sprinkle with lemon juice and grind well with a fork. Mix with yogurt, add chopped eggs and onions. Add a little olive oil, season with salt and pepper to taste, mix well, then serve with plain or toast. It is very good!
