We pass the Telemea cheese on the grater with large meshes.
Whisk the egg whites with a pinch of salt.
Add the semolina, 200 gr. sour cream and telemeau, mix at low speed until smooth.
Preheat the oven to 175 degrees.
Grease the tray with oil, place 1 sheet of pie, grease it with a little oil, using a silicone brush, then repeat the procedure until we overlap 3-4 sheets.
Over these we put half of the cheese filling, then again we layer 3-4 sheets greased with oil, again a layer of cheese, then the rest of the sheets greased with oil.
We mix the yolks with 100 gr. sour cream, then grease the surface of the last sheet with this mixture, then sprinkle with grated smoked cheese and sesame and flax seeds.
With a sharp knife, slice the burek, then put it in the oven for 35 minutes until it browns nicely.
