The pieces of ribs are washed and boiled in a bowl with 3-4 l of water. When it has boiled, it foams well, add finely chopped onions, then carrots, parsnips and celery cut into small cubes. Boil on the right heat for about 20-30 minutes, then add the diced tomatoes. When the meat is penetrated, add the diced potatoes, finely chopped dill and parsley, thyme and a part of the broth broth, then put the borscht. Bring to a boil and adjust the taste with salt. We turn off the flame and add the rest of the larch to the pot.

Ingredient:

500 gr green beans
400 gr pork ribs
1 carrot
1 onion
1 bell pepper
50 ml oil
fresh parsley
salt
pepper
100 gr sour cream

Method of preparation:

The beans are washed, cleaned and cut into 3-4 cm pieces. The ribs are washed and portioned into suitable pieces. In a pot add the ribs and 2 l of water, bring to a boil over low heat for 20 minutes. After this time, add the beans and let them boil for another 10 minutes.

Cut the pepper into cubes, cut the carrot into rounds, cut the onion into small pieces. The chopped vegetables are added to the soup and left to boil over low heat.

When the vegetables are cooked enough, add salt, pepper to taste and sour cream diluted with a few tablespoons of soup. Let it boil for about 1 min.

While browning the ribs, finely chop the vegetables, and then add them over the ribs. Saute the mixture for 3-4 minutes, then add the flour and mix well until incorporated into the fat. Now add the hot soup together with the milk. Boil the soup over low heat.

During this time, cut the salad into squares, and after 15 minutes add it together with the spices, over the soup. Continue cooking for 5-6 minutes and then add the vinegar, turning off the heat.

Mouse soup

For the beginning, put the ribs to boil, and the mouse is cleaned well of fat, after which thin strips are cut and boiled in another pot.

During the cooking, the foam is taken from the ribs, as well as from the mice. Cut the onion into four and add over the ribs.

When the ribs have boiled, remove them and separate them from the bone, adding them back. Cut the carrot and celery into cubes and add to the ribs. When the mouse is also boiled, strain it and put it all over the vegetables and ribs. The next step is to add salt and delicacy, of course to taste.

Let it boil for about 15 minutes, then remove the onion and add a composition consisting of: yolks, crushed garlic and sour cream. Attention: the composition is poured slowly, mixing carefully.

The soup obtained is salted if necessary, after which it is left for about 10 minutes and served with parsley on top (I did not have fresh parsley and I used it dry).
Serve with hot peppers.
