Chicken bell peppers

Chicken bell peppers

Cut the meat into cubes and fry them in oil until they turn white, then take them out in a bowl.

In the remaining oil, fry the chopped onion, then pour a glass of water and let the onion soften. Add the paprika, hot paprika, bay leaf, sliced baked peppers, diced tomatoes, tomato paste, salt, pepper and meat. Pour the composition into a heat-resistant dish and put it in the preheated oven at 170 degrees C for 40-50 minutes.

For dumplings, bring water to a boil. Beat the eggs with the omelet salt, then add the water and add the flour until you get a thicker ciulama.

Put the composition with the spoon (like the semolina dumplings) in boiled water, over low heat, so that the water does not bubble, because they will spread. Boil them for about 15 minutes, since they rise to the surface.

Mix the cream with a tablespoon of flour and then add a few tablespoons of hot sauce and mix well to bring to the same temperature, then pour over the composition in the oven and mix. Add the drained dumplings in which they boiled. Mix and season with salt and pepper. Leave for another 5 minutes in the oven, then set aside and sprinkle with finely chopped parsley.

Chicken bell pepper & # 8211 short history

Frédéric le Play, a French sociologist, began publishing the 6-volume series in 1855 European workers (European Workers) showing for the first time the culinary dishes of a farmer from Hatvan, Hungary.

& # 8222Meat is prepared mainly in the form of paprika, becoming a traditional food. It is prepared from various kinds of meat and poultry, with smoked bacon or not, with onions, salt and paprika, which also gave the name of this preparation. They are fried for a long time for the sauce to thicken. & # 8221 (source)

In the book written by the chef Czifray István in 1830 & # 8222The Hungarian national cookbook & # 8221 he mentions the recipe of chicken paprika, adding sour cream according to preference and using enibahar for spices. As in any traditional Hungarian recipe the pepper is missing, which is not a traditional Hungarian spice. They taste hot using paprika (hot paprika) in combination with sweet.

Therefore, paprika is not a modern food and a very classic and old one, specific to Hungary. From there it spread to Banat and Transylvania as well as to Serbia, the Czech Republic or Slovakia. More information can be found here & # 8211 in lbs. English.

This dish can also be cooked in a cauldron, outdoors. It's even tastier. More recipes in the cauldron (bograci) find here.

I respected here as much as possible the old, traditional recipe. As a side dish I also chose something traditional Hungarian: flour dumplings.

Chicken bell pepper

An economical recipe that should not be missing from any household & # 8211 chicken paprika, in the cevabun.ro version.

Ingredient:

  • 4 chicken legs
  • 4 teaspoons cream
  • 2 tablespoons paprika
  • 1 teaspoon paprika
  • 1 tablespoon flour
  • 1.5 liters of chicken soup
  • 1 tablespoon oil
  • 1 onion
  • 4 teaspoons hot pepper paste (optional) and pepper
  1. The first secret of this personal version of paprika is chicken soup. Make a chicken soup (or use a ready-made one) to boil, along with the chicken and vegetables, add a lightly fried onion on the stove or in a fat-free Teflon pan. It will give a sweet and slightly smoky taste to the soup. If you do not have chicken soup, make one of the cubes, to which you add the onion and a tablespoon of oil.
  2. The second secret is to extract chicken fat from the skin to add flavor. Remove the skin from the thighs and cut it into squares. Brown the chicken skin in a tablespoon of sunflower oil. Fry lightly over low heat until all the fat has come out of the skin and it starts to brown. Strain the obtained fat.
  3. Heat the chicken oil and fat in a saucepan large enough to fit all four thighs side by side, and lightly fry them on both sides.
  4. Add the paprika (sweet and hot) and the flour to the pan and fry them lightly. Be careful not to burn them!
  5. Turn off everything with the chilled chicken soup.
  6. Cover the pan and simmer for 30 minutes until the meat is cooked through and the juice has turned into a creamy red sauce. Add salt and pepper.
  7. The last secret to obtaining a fine cream is to strain the paprika to remove any lumps.

Serve the hot paprika as follows: place one chicken leg in each plate, pour the sauce over it and add a teaspoon of cream. Optionally add a teaspoon of hot pepper paste. The chicken paprika is eaten with either bread or semolina dumplings added at the end so as not to "dirty" them.
