  2. With an electric mixer, start mixing on medium and add one egg white at a time, beating well after each addition. Continue beating until stiff peaks form.
  3. Scrape icing into a resealable freezer bag and squish it into one corner. Cut off a very small portion of the corner tip of the bag and you are ready to ice!

Royal Icing For Gingerbread Houses

Royal Icing for gingerbread houses is the essential component for building gingerbread houses and confections.

This Royal Icing Recipe is for building gingerbread houses and all of the handmade confections. Simply beat the icing a little longer for building the gingerbread houses and making the holiday trees.

When making the red doors and custom door mats, simply beat the Royal Icing less. The consistency will be thick and pourable.


Royal Icing Recipe

It’s very important to use the right icing recipe, in order for the houses to stick together. This is the royal icing recipe we use, and it dries as hard as glue!

To make royal icing you’ll need:

  • 3 egg whites or meringue powder (I use meringue powder: 6 tsp meringue powder + 6 Tablespoons water)
  • 1/4 tsp cream of tartar
  • 1 pound powdered sugar


Once the royal icing is the right thickness, put it into an icing bag with a thick tip secured. This is what we use:

  • Piping bags and thick tips
  • Gingerbread house pieces or graham crackers
  • Assorted candy
  • Cereal, crackers, and pretzels for roof

Now grab your graham crackers or gingerbread pieces and start gluing your houses together. Once they are secure, you can use this same icing recipe to attach all your favorite candies, crackers, and cereal to decorate your Christmas gingerbread house.

You can also use this gingerbread icing recipe to decorate a face on a gingerbread man cookie or snowflake cookie.

Keep in mind: this gingerbread house frosting is very thick and intended to use as a “glue”. So if you’re wondering how to make a gingerbread house stick, this is great!


In the bowl of a stand mixer fitted with a paddle attachment, combine egg white with half the powdered sugar. Mix at low speed until sugar disappears into a paste, then gradually sprinkle in the rest. Increase speed to medium and beat until smooth and light, about 2 minutes. If too stiff, thin icing with a few drops of water. Use immediately keep covered tightly in plastic to prevent icing from drying in bowl. Royal icing can be kept in an airtight container at room temperature up to 12 hours.

For Coloring: To dye royal icing with gel paste (see note), divide into as many bowls as you wish to have colors. Cover each tightly with plastic. Working with 1 bowl at a time, add 1 drop gel paste to a batch of icing, then stir until fully incorporated before adjusting color with more gel. Cover bowls tightly when not in use.

It’s like that for everyone! That’s why I’m excited to tell you all about this secret I discovered! Making a gingerbread house, if you do it the right way, is as relaxing as those adult coloring books. Just sitting there having fun making something pretty with no pressure! The trick is to make it as simple as possible!! That’s where Nestlé candies and I come in!

I start by using a kit! I found a kit that came with the house pre-assembled! This is life changing! I have zero patience for building the house itself. I wanted a fun project I could do that would be relaxing so I went simple! I pulled the house out and tossed the rest! I wanted the ease of the kit but I had some really great candy to use and I don’t want my gingerbread house to look like the one on the box. To really get the relaxing benefit out of this exercise you will want to use the good stuff to decorate. Trust me! Snacking on Butterfinger Peanut Butter Cups Minis and SweeTARTS Soft & Chewy Ropes make this the best me time you’ll spend.

Butterfinger Peanut Butter Cups Minis were my first candy to sample. I’m the one that steals the Butterfingers from my kids at Halloween! These have a smooth texture with pieces of the crunchy Butterfinger filling mixed in then topped with milk chocolate! SO. AMAZING! Next up were the SweeTART Soft & Chewy Ropes! I’d never tried them before so I had to give them a shot! They’re cherry flavored licorice rope and have a tart center so you get the sweet and tart flavor of SweeTarts! I really love that both of these guys have no artificial flavor or colors!

The next step to the easiest gingerbread house is using the best gingerbread icing ever! I love how simple it is! It’s only 3 ingredients and I always have them on hand! This recipe is for a normal sized batch but we made 2 batches because we go overboard with icing! Lots and lots of icing! I love this recipe because it’s thick and sticky! It will hold all those yummy candies right where you want them with no frustration!

My husband quickly got in on the gingerbread action with me. We got to work while the kids were at school. Don’t worry though, they have their own to decorate too! We’re just waiting for a snow day or the weekend, which ever comes first! Casey and I really had fun working together on this house and we’re both super happy with the way it turned out! Let me take you on a tour!

We started with the roof. We love Christmas lights on our house and that’s always the first thing to go up on our house so we wanted to do something similar on our gingerbread house. We used the SweeTARTS Soft & Chewy Ropes and the SweeTARTS Mini chewy candies to make our little lights. These are super cute for kids to give as a quick present. They even have a gift tag right on the box.

We also used the Frosty Nerds to decorate the top of the roof and the top of the door. I love the color that it adds to the roof!

I made a Christmas Wreath for the front of the house using a sugar cookie, green icing and some red Nerds to decorate. We have a giant wreath in the same place on my house too. I think there’s a pattern here! It wasn’t even intentional!

We used the PixyStix Candy Canes on the sides of the front of the house. It reminds me of a candy house from a fairy tale! We put them in the Butterfinger Peanut Butter Cups Minis to help them stay up and I love it! Check out that Butterfinger mat on the ground? It’s super cute right! My husband made that!

On the side we made a few Christmas trees out of sugar cones. I covered them in frosting and then we used the SweeTART Soft & Chewy Ropes as garland and cut some up in small squares to make large ornaments. I also used the Frosty Nerds as smaller ornaments on the trees!

I’m so happy with how my gingerbread house turned out! My youngest monkey was so excited when he saw it! His exact words were “Wow! That’s epic!!” I call that a total mom win! You can pick up all the candy you need at major stores nationwide so it’ll be super easy to make your own gingerbread house!

Dough for gingerbread construction projects is perfectly edible it just has more flour in it to make it sturdier than gingerbread cookie dough would have. It's simple to put together, and can be used for gingerbread men, trees, and other decorations, as well as for the house itself.

Ingredients

  • 6 tablespoons (85g) butter
  • 3/4 cup (170g) buttermilk
  • 1 cup (227g) brown sugar, packed
  • 1/2 cup (170g) molasses
  • 1 large egg
  • 5 cups (602g) King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 large egg whites*
  • 1/2 teaspoon cream of tartar
  • 4 cups (454g) unsifted confectioners' sugar
  • Food coloring, optional , lemon extract, vanilla extract, or the flavor of your choice, optional, to taste

*Or substitute 1/4 cup meringue powder combined with 1/2 cup cold water.

Instructions

To make the dough: In a large saucepan, heat the buttermilk and butter until the butter is just melted remove from the heat.

Add the brown sugar and molasses, then beat in the egg.

Whisk the baking soda, spices, and salt with 1 cup of the flour.

Add this to the wet mixture and mix until incorporated.

Add flour 1 cup at a time until you have a smooth, stiff dough. It should be stiff enough to be flexible, and neither crumbly nor sticky.

Divide the dough in half, flatten each half, and wrap in plastic. Refrigerate for at least 1 hour.

Using a quarter of the dough at a time (return the unused portion to the refrigerator), roll the dough 1/8" thick on a piece of parchment.

Cut your construction pieces as needed, pulling away the scraps to be re-rolled. Transfer the dough, parchment and all, to a baking sheet.

Bake the dough for 10 to 12 minutes, until set and very lightly browned at the edges.

Remove from the oven and trim any rough edges while the pieces are still warm. Cool completely before using for construction.

To make the royal icing: In a large bowl, whip the egg whites with the cream of tartar until foamy.

Sprinkle in the sugar gradually, whipping all the while. The more you whip the icing, the stiffer it'll be and the faster it'll harden up.

Cover the bowl of icing, taking out only as much as you'll need immediately. The easiest way to store the icing for long periods of time is in a plastic pastry bag, or zip-top food storage bag.
